Ingredients
  • Butter (2 tablespoons)
  • Onion (finely chopped) (1)
  • Garlic cloves (minced) (2)
  • Mushrooms (sliced) (500 grams)
  • All-purpose flour (2 tablespoons)
  • Vegetable or chicken broth (4 cups)
  • Heavy cream (1 cup)
  • Salt (to taste)
  • Black pepper (to taste)
Steps
  • 1

Step 1 In a large pot, melt the butter over medium heat.

  • 2

Step 2 Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent.

  • 3

Step 3 Add the sliced mushrooms to the pot. Cook until the mushrooms release their moisture and reduce in size.

  • 4

Step 4 Sprinkle the all-purpose flour over the mushrooms and stir well to coat.

  • 5

Step 5 Slowly pour in the vegetable or chicken broth while stirring continuously. Bring the mixture to a boil.

  • 6

Step 6 Reduce the heat to low and simmer the soup for about 10 minutes, stirring occasionally.

  • 7

Step 7 Stir in the heavy cream and season with salt and black pepper to taste. Cook for an additional 5 minutes.

  • 8

Step 8 Remove the pot from the heat and let the soup cool slightly.

  • 9

Step 9 Using a blender or an immersion blender, puree the soup until smooth and creamy.

  • 10

Step 10 Return the soup to the pot and reheat gently before serving.
