Ingredients
  • 1 cup dried lentils (rinsed and drained)
  • 1 onion (finely chopped)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 4 cups vegetable broth
  • 1 can diced tomatoes ((14 oz))
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 bay leaf
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • Fresh parsley (for garnish)

    Step 1 Heat olive oil in a large pot over medium heat. Add the onions, carrots, and celery. Cook until vegetables are soft, about 5 minutes.

    Step 2 Add garlic, cumin, and coriander to the pot. Cook for another minute until fragrant.

    Step 3 Add lentils, vegetable broth, diced tomatoes, bay leaf, salt, and pepper. Stir well.

    Step 4 Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until lentils are tender.

    Step 5 Remove the bay leaf from the pot. Taste and adjust seasoning as needed.
