Ingredients
- 1 cup dried lentils (rinsed and drained)
- 1 onion (finely chopped)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 4 cups vegetable broth
- 1 can diced tomatoes ((14 oz))
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 bay leaf
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- Fresh parsley (for garnish)

Step 1 Heat olive oil in a large pot over medium heat. Add the onions, carrots, and celery. Cook until vegetables are soft, about 5 minutes.

Step 2 Add garlic, cumin, and coriander to the pot. Cook for another minute until fragrant.

Step 3 Add lentils, vegetable broth, diced tomatoes, bay leaf, salt, and pepper. Stir well.
