Ingredients
  • 2 cups all-purpose flour (240g)
  • 1/2 cup granulated sugar (100g)
  • 1 tablespoon baking powder (12g)
  • 1/2 teaspoon salt (2.5g)
  • 1 cup milk (240ml)
  • 1/4 cup unsalted butter, melted (60g)
  • 1 large egg (1)
  • 1 teaspoon vanilla extract (5ml)
  • 1 1/2 cups fresh blueberries (225g)
  • 1 tablespoon all-purpose flour (8g)
  • 2 tablespoons granulated sugar (25g)
Steps
  • 1

Step 1 Preheat the oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

  • 2

Step 2 In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well.

  • 3

Step 3 In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.

  • 4

Step 4 Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  • 5

Step 5 In a small bowl, toss the blueberries with 1 tablespoon of flour. This helps prevent them from sinking to the bottom of the muffins.

  • 6

Step 6 Gently fold the blueberries into the batter.

  • 7

Step 7 Scoop the batter into the muffin tin, filling each cup about 2/3 full.

  • 8

Step 8 Sprinkle the tops of the muffins with the remaining 2 tablespoons of sugar.

  • 9

Step 9 Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  • 10

Step 10 Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
