Ingredients
  • 1 pound cooked sausage, sliced (1 pound)
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces (1 pound)
  • 1 onion, chopped (1)
  • 1 green bell pepper, chopped (1)
  • 3 stalks celery, chopped (3)
  • 3 cloves garlic, minced (3 cloves)
  • 1 can (14 oz) diced tomatoes (1 can)
  • 2 cups chicken broth (2 cups)
  • 1 tsp paprika (1 tsp)
  • 1 tsp dried thyme (1 tsp)
  • 1 tsp dried oregano (1 tsp)
  • 1/2 tsp cayenne pepper (1/2 tsp)
  • 1/2 tsp salt (1/2 tsp)
  • 1/4 tsp black pepper (1/4 tsp)
  • 2 cups cooked rice (2 cups)
  • 2 green onions, sliced (2)

    Step 1 In a large pot, heat some oil over medium heat.

    Step 2 Add the sliced sausage and cook until browned, then remove from the pot and set aside.

    Step 3 In the same pot, add the chicken thighs and cook until browned, then remove from the pot and set aside.

    Step 4 Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Cook until the vegetables are softened.

    Step 5 Return the sausage and chicken to the pot. Stir in the diced tomatoes, chicken broth, paprika, thyme, oregano, cayenne pepper, salt, and black pepper.

    Step 6 Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
